  3. In a large mixing bowl, whisk together 1 1/4 cups (250g) granulated sugar and 1/2 cup (100g) brown sugar. Add the melted butter and whisk until the mixture is smooth and shiny.
  4. Add 3 large eggs and 2 teaspoons (10ml) vanilla extract to the sugar mixture. Beat until well combined. The mixture should be thick and slightly fluffy.
  5. In a separate bowl, sift together 1 cup (125g) all-purpose flour, 3/4 cup (75g) unsweetened cocoa powder, and 1/4 teaspoon salt. Gradually add this dry mix into the wet ingredients, folding gently with a spatula until just combined.
  6. Pour the batter into the prepared pan and spread it out evenly with the spatula.
