Ingredients

Scale
  • 1/2 cup (115g) unsalted butter, softened
  • 1 cup (200g) brown sugar
  • 1/4 cup (80g) molasses
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup (125g) all-purpose flour
  • 1/4 cup (25g) cocoa powder
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Optional: 1/2 cup (60g) chopped nuts or 1/2 cup (90g) chocolate chips

Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a large mixing bowl, cream together 1/2 cup (115g) softened unsalted butter and 1 cup (200g) brown sugar until light and fluffy. Add 2 large eggs, one at a time, beating well after each addition. Stir in 1/4 cup (80g) molasses and 1 teaspoon vanilla extract.
  3. In a separate bowl, whisk together 1 cup (125g) all-purpose flour, 1/4 cup (25g) cocoa powder, 1 teaspoon ground ginger, 1 teaspoon ground cinnamon, 1/2 teaspoon ground nutmeg, 1/2 teaspoon baking powder, and 1/4 teaspoon salt.
  4. Gradually add the dry mixture to the wet ingredients, stirring until just combined. Avoid overmixing to keep your brownies soft and fudgy.
  5. Gently fold in 1/2 cup (60g) chopped nuts or 1/2 cup (90g) chocolate chips if desired.
  6. Pour the batter into the prepared pan and smooth the top with a spatula. Bake for 25-30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
  7. Let the brownies cool in the pan for 10 minutes, then lift them out using the parchment paper and transfer them to a wire rack to cool completely.
  8. Once cooled, cut into squares and enjoy!
