This maple sausage breakfast casserole is a warm, hearty dish perfect for cozy mornings. The sweet hint of maple paired with savory sausage and gooey cheese makes it irresistible.

Ingredients

Scale
  • 1 pound Italian sausage, cooked and crumbled (maple-flavored preferred)
  • 1/4 cup pure maple syrup
  • 6 large eggs, room temperature
  • 2 cups whole milk
  • 2 cups shredded cheddar cheese
  • 4 cups day-old bread, cubed (sourdough or French bread recommended)
  • 1 medium onion, diced
  • 1 medium bell pepper, diced (any color)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons butter (for greasing baking dish)

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or cooking spray.
  2. In a skillet over medium heat, cook the sausage until browned and crumbled. Remove and set aside.
  3. In the same skillet, sauté the diced onion and bell pepper for 3-4 minutes until soft and fragrant. Set aside.
  4. Cut the day-old bread into bite-sized cubes and spread evenly across the bottom of the greased baking dish.
  5. Layer the cooked sausage and sautéed veggies on top of the bread cubes. Sprinkle shredded cheddar cheese evenly over the top.
  6. In a large mixing bowl, whisk together eggs, milk, maple syrup, salt, and pepper. Pour the mixture evenly over the casserole, ensuring all bread is soaked.
  7. Cover the dish with aluminum foil and let it rest for at least 20 minutes or overnight in the refrigerator.
  8. Bake the covered casserole in the preheated oven for 35 minutes. Remove the foil and bake for another 10-15 minutes, or until the top is golden and the center is set.
  9. Let the casserole cool for 5 minutes before slicing and serving. Drizzle extra maple syrup over the top if desired.
