  • ½ cup (115g) unsalted butter, cold and cubed
  • 45 tablespoons (60-75ml) ice-cold water
  • ½ cup (120ml) honey
  • ½ cup (100g) granulated sugar
  • ½ teaspoon salt
  • ¾ cup (180ml) heavy cream
  • 4 tablespoons (60g) unsalted butter, softened
  • ¾ cup (180ml) whole milk
  • 3 large eggs
  • 1 teaspoon pure vanilla extract

Instructions

  1. Prepare the crust: In a mixing bowl, whisk together the flour, sugar, and salt. Add the cold, cubed butter and use a pastry blender (or your fingers) to work it into the flour until it resembles coarse crumbs.
  2. Gradually add ice-cold water, one tablespoon at a time, mixing just until the dough comes together. Be careful not to overwork the dough!
  3. Shape the dough into a flat disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  4. Caramelize the honey: In a heavy-bottomed saucepan, heat the honey over medium heat. Stir occasionally and watch closely until it turns a deep amber color and smells rich and nutty. This process usually takes about 5-7 minutes. Remove from heat and let it cool slightly.
  5. Make the filling: In a mixing bowl, whisk together the sugar, salt, heavy cream, softened butter, and milk until smooth. Slowly add the caramelized honey while whisking to combine.
  6. Add the eggs one at a time, whisking thoroughly after each addition. Stir in the vanilla extract.
  7. Preheat the oven: Set your oven to 375°F (190°C).
  8. Roll out the crust: On a lightly floured surface, roll out the chilled dough to fit your 9-inch pie dish. Carefully transfer the dough to the dish, pressing it into the edges and trimming any excess.
  9. Pour the filling into the prepared crust. Place the pie on the middle rack and bake for 40-45 minutes, or until the filling has set and the top is golden brown. It should have a slight jiggle in the center.
  10. Let the pie cool completely on a cooling rack before serving.
