  • 1/4 cup (50g) packed brown sugar
  • 1/4 cup (85g) molasses
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350Β°F (175Β°C) and line baking sheets with parchment paper or silicone mats.
  2. In a large bowl, sift together the flour, baking soda, ground ginger, cinnamon, cloves, and salt. Whisk to combine evenly.
  3. In another bowl, beat the softened butter with granulated sugar and brown sugar until light and fluffy, about 3-4 minutes.
  4. Beat in the molasses, egg, and vanilla extract until fully combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed or folding gently until just combined. Do not overmix.
  6. Cover the dough with plastic wrap and refrigerate for at least 30 minutes.
  7. Scoop dough balls using a cookie scoop or tablespoon, roll them in granulated sugar, and place about 2 inches apart on prepared baking sheets.
  8. Bake for 10-12 minutes until edges are set but centers remain soft.
  9. Let cookies rest on the baking sheet for 5 minutes before transferring to a cooling rack.
