  • ¼ cup (50g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup (170g) semi-sweet or dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats and set aside.
  2. In a medium bowl, whisk together gluten-free all-purpose flour, xanthan gum, baking soda, and salt until well combined.
  3. In a large mixing bowl, beat softened unsalted butter, brown sugar, and granulated sugar with an electric mixer on medium speed until light and fluffy, about 3-4 minutes.
  4. Beat in the large egg and pure vanilla extract until fully incorporated.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed or folding by hand until just combined. Do not overmix.
  6. Fold in the chocolate chips evenly throughout the dough.
  7. Using a cookie scoop or tablespoon, drop rounded spoonfuls onto prepared baking sheets, spacing about 2 inches apart.
  8. Bake for 10-12 minutes, or until edges are golden but centers remain soft.
  9. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Use softened, not melted butter for best texture. Don’t skip xanthan gum unless your flour blend already contains it. For thicker cookies, chill dough for 30 minutes before baking.
