  • 1/2 cup (90g) white chocolate chips or chopped white chocolate
  • 1 teaspoon coconut oil or vegetable oil
  • Optional: Chopped pecans or walnuts

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, salt, and ground cinnamon. Set aside.
  3. In a large bowl, beat unsalted butter, brown sugar, and maple syrup until light and fluffy (about 2 minutes). Add the egg and vanilla extract, mixing until just combined.
  4. Gradually add dry ingredients to wet ingredients, mixing on low speed until a soft dough forms. Fold in nuts or cranberries if using.
  5. Scoop dough by tablespoonfuls (about 1 inch balls) and place 2 inches apart on prepared baking sheets. If dough is too soft, chill for 10 minutes before scooping.
  6. Bake for 9-12 minutes, until edges are set and centers look slightly underdone. Rotate pans halfway through baking.
  7. Let cookies rest on the baking sheet for 5 minutes, then transfer to a wire rack to cool.
  8. In a microwave-safe bowl, heat white chocolate chips and coconut oil in 20-second bursts, stirring until smooth.
  9. Drizzle melted white chocolate over cooled cookies using a spoon, piping bag, or zip-top bag with a snipped corner. Let set for 30 minutes or refrigerate for quicker setting.
