  • 2 cups (240 g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup (113 g) unsalted butter, melted and cooled
  • ¾ cup (150 g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (120 g) chopped toasted walnuts or pecans
  • Optional: ½ cup chocolate chips or dried fruit

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line your muffin tin with paper or silicone liners.
  2. In a medium bowl, mash 3 ripe bananas with a fork until mostly smooth but still slightly chunky.
  3. Add ½ cup melted butter, ¾ cup granulated sugar, 2 large eggs, and 1 teaspoon vanilla extract to the mashed bananas. Stir gently until combined.
  4. In a large bowl, whisk together 2 cups all-purpose flour, 1 teaspoon baking soda, ½ teaspoon baking powder, and ½ teaspoon salt.
  5. Pour the banana mixture into the dry ingredients and stir gently with a spatula or wooden spoon until no flour streaks remain. Do not overmix.
  6. Fold in 1 cup chopped toasted walnuts or pecans.
  7. Spoon the batter evenly into the prepared muffin tin, filling each about ¾ full.
  8. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean with a few moist crumbs.
  9. Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Use ripe bananas for natural sweetness and moisture. Toast nuts for 5 minutes at 350°F to enhance flavor. Avoid overmixing the batter to keep muffins tender. Reduce sugar slightly if bananas are very ripe. For gluten-free, substitute flour with a 1:1 gluten-free baking blend. For dairy-free, use coconut oil instead of butter.
