  • 1 large egg, room temperature
  • 2 teaspoons vanilla extract

  • 2 tablespoons unsalted butter, melted
  • 1 cup powdered sugar (optional glaze)
  • 2 tablespoons milk (optional glaze)
  • 1/4 teaspoon vanilla extract (optional glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats and set aside.
  2. In a medium mixing bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  3. In a large mixing bowl, beat the butter and granulated sugar together until creamy and smooth, about 2-3 minutes. Add the egg and vanilla extract, and beat until well combined.
  4. Gradually add the dry ingredients into the wet mixture, mixing until just combined. Be careful not to overmix, as this can lead to dense cookies.
  5. In a separate bowl, prepare the streusel topping by combining the flour, brown sugar, and cinnamon. Pour in the melted butter and mix until crumbly.
  6. Using a cookie scoop or spoon, drop balls of dough onto the prepared baking sheets, spacing them about 2 inches apart. Flatten each ball slightly with your hand or the bottom of a glass.
  7. Sprinkle a generous amount of streusel topping over each cookie, gently pressing it into the dough to help it stick.
  8. Bake the cookies for 10-12 minutes, or until the edges are lightly golden. The centers will look slightly underbaked—that’s okay!
  9. Remove from the oven and allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
  10. If using the optional glaze, whisk together the powdered sugar, milk, and vanilla extract until smooth. Drizzle over the cooled cookies for an extra touch of sweetness.
