  • 2 cups (240 grams) all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup (150 grams) granulated sugar
  • 2 large eggs, room temperature
  • ½ cup (120 grams) Greek yogurt
  • ¼ cup (60 ml) fresh orange juice
  • 1 tablespoon finely grated orange zest
  • ⅓ cup (75 grams) unsalted butter, melted and cooled
  • 1 cup (120 grams) dried cranberries
  • ¾ cup (90 grams) chopped walnuts, toasted
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray. Line with parchment paper if desired.
  2. Toast the walnuts on a baking sheet for 5-7 minutes until fragrant and lightly golden. Let cool.
  3. In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  4. In a medium bowl, beat the eggs with granulated sugar until pale and slightly thickened, about 2 minutes.
  5. Stir in Greek yogurt, fresh orange juice, grated orange zest, melted butter, and vanilla extract into the egg mixture.
  6. Pour the wet ingredients into the dry ingredients and gently fold with a spatula until just combined. Avoid overmixing.
  7. Fold in the dried cranberries and cooled toasted walnuts gently.
  8. Transfer the batter evenly into the prepared loaf pan and smooth the top.
  9. Bake for 50-60 minutes, starting to check at 50 minutes by inserting a toothpick in the center; it should come out clean or with a few moist crumbs.
  10. Let the bread cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely.

Notes

Do not overmix the batter to keep the crumb tender. Toast walnuts for enhanced flavor. Use fresh orange zest avoiding the bitter white pith. Tent bread with foil if top browns too quickly. Let bread cool fully before slicing for cleaner cuts.
