  • 1 tsp dried parsley
  • Salt and freshly ground black pepper, to taste
  • 1 ½ cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • ¾ cup whole milk (or dairy-free alternative)
  • 2 tbsp unsalted butter, melted
  • Freshly chopped parsley for garnish (optional)

Instructions

  1. Chop the onion, carrots, and celery. Place the chicken thighs at the bottom of the crockpot. Season with salt, pepper, thyme, and parsley. Add the chopped veggies and minced garlic on top. Pour the chicken broth over everything, ensuring the chicken is mostly submerged.
  2. Cover and cook on high for 3-4 hours or on low for 6-7 hours until the chicken is tender and cooked through. Stir gently halfway through if possible.
  3. In a medium bowl, whisk together the flour, baking powder, and salt. Stir in the milk and melted butter just until combined; do not overmix. The batter will be thick but spoonable.
  4. Remove the chicken thighs from the crockpot and shred them using two forks. Return the shredded chicken to the crockpot and stir gently.
  5. Drop spoonfuls of the dumpling batter onto the surface of the hot broth without stirring. Cover the crockpot tightly and cook on high for another 30-40 minutes until dumplings puff up and cook through.
  6. Check seasoning and adjust salt and pepper if needed. Sprinkle with fresh parsley if desired.
  7. Ladle the chicken, veggies, broth, and dumplings into bowls and serve warm.

Notes

For gluten-free dumplings, substitute all-purpose flour with almond or oat flour but expect a different texture. For dairy-free, use coconut milk and dairy-free margarine. Browning chicken before slow cooking is optional but adds flavor. Do not stir after adding dumplings to allow them to puff up properly.
