  • 3 1/2 cups (420 g) all-purpose flour
  • 1 cup (90 g) rolled oats, plus extra for topping
  • 2 1/4 teaspoons (1 packet) active dry yeast
  • 1 1/4 cups (300 ml) warm water (around 110°F / 43°C)
  • 1/4 cup (85 g) honey, plus 2 tablespoons for glaze
  • 4 tablespoons (60 g) unsalted butter, melted and cooled
  • 1/4 cup (60 ml) warm milk
  • 1 1/2 teaspoons salt
  • 1 large egg, room temperature

Instructions

  1. Activate the yeast: In a small bowl, combine warm water (110°F/43°C), 1 tablespoon honey, and active dry yeast. Stir gently and let sit for 5–10 minutes until foamy.
  2. Mix dry ingredients: In a large bowl, combine the all-purpose flour, rolled oats, and salt. Stir to blend evenly.
  3. Combine wet ingredients: In a separate bowl, whisk the egg, melted butter, warm milk, and remaining honey (3 tablespoons).
  4. Make the dough: Pour the yeast mixture and wet ingredients into the dry ingredients. Stir with a wooden spoon or dough hook until the mixture forms a shaggy dough.
  5. Knead the dough: Turn the dough onto a lightly floured surface. Knead for about 8–10 minutes until smooth and elastic. If using a stand mixer, knead with the dough hook on medium speed for 6–7 minutes.
  6. First rise: Lightly oil a large bowl, place the dough inside, and cover with a clean kitchen towel or plastic wrap. Let it rise in a warm, draft-free area for about 1 to 1 1/2 hours, or until doubled in size.
  7. Shape the rolls: Punch down the dough gently to release air. Divide into 12 equal pieces (about 70 grams or 2.5 oz each). Shape each piece into a smooth ball by pulling the edges underneath and pinching at the base.
  8. Second rise: Arrange the rolls on a parchment-lined baking sheet or round pan, spacing them evenly but close enough to touch as they expand. Cover and let rise again for 30–40 minutes until puffy.
  9. Prepare for baking: Preheat your oven to 375°F (190°C). Just before baking, brush the rolls with a little milk or melted butter and sprinkle extra oats on top.
  10. Bake: Bake for 18–22 minutes until golden brown and the rolls sound hollow when tapped on the bottom.
  11. Honey glaze: While the rolls are still warm, brush them generously with 2 tablespoons of honey.
  12. Cool and serve: Let the rolls cool slightly on a wire rack before serving.

Notes

Do not rush the rise; keep dough covered during rising to maintain humidity and softness. Use room temperature eggs for better dough consistency. Brush honey glaze while rolls are warm to avoid melting it off. For dairy-free or vegan versions, substitute butter and milk with plant-based alternatives and use a flax egg instead of chicken egg.
