Soft, slightly sweet whole wheat dinner rolls paired with a fragrant herb butter, perfect for cozy meals and easy to make with simple ingredients.

  • 2 ½ cups (300 g / 10.5 oz) whole wheat flour, packed
  • 1 cup (120 g / 4.2 oz) all-purpose flour
  • 2 ¼ tsp (1 packet) active dry yeast
  • 1 cup (240 ml / 8 fl oz) warm water (about 110°F / 43°C)
  • 3 tbsp (60 ml / 2 fl oz) honey
  • 2 tbsp (28 g / 1 oz) unsalted butter, melted and cooled
  • 1 tsp salt
  • 1 large egg, room temperature
  • ¼ cup (56 g / 2 oz) unsalted butter, softened (for herb butter)
  • 1 tbsp fresh parsley, finely chopped
  • 1 tsp fresh rosemary, finely chopped
  • 1 garlic clove, minced (optional)
  • Pinch of salt (for herb butter)

Instructions

  1. Activate the yeast by combining warm water and honey in a large bowl. Sprinkle yeast over the top, stir gently, and let sit until foamy, about 5-10 minutes.
  2. Whisk together whole wheat flour, all-purpose flour, and salt in a separate bowl.
  3. Add melted butter and egg to the yeast mixture. Gradually mix in dry ingredients until a shaggy dough forms.
  4. Knead dough on a lightly floured surface for 8-10 minutes until smooth and elastic, or use a stand mixer with dough hook on medium speed for about 7 minutes.
  5. Place dough in a greased bowl, cover, and let rise in a warm place until doubled in size, about 1 to 1.5 hours.
  6. Punch down dough gently and divide into 12 equal pieces (about 2 oz each). Shape each into a smooth ball and place on a parchment-lined baking sheet or round pan.
  7. Cover rolls loosely and let rise again until puffy, about 30-45 minutes.
  8. Preheat oven to 375°F (190°C). Optionally place a small oven-safe dish with water on the bottom rack for steam.
  9. Bake rolls for 18-22 minutes until golden brown and hollow sounding when tapped.
  10. While rolls bake, mix softened butter, parsley, rosemary, garlic, and salt to make herb butter.
  11. Remove rolls from oven and immediately brush generously with herb butter. Let cool slightly before serving.

Notes

If dough is too sticky, lightly flour hands and surface instead of adding too much flour to avoid dense rolls. Use a timer for rising stages and be patient for fluffier rolls. Brush herb butter while rolls are hot for best flavor. Fresh herbs can be substituted with dried herbs at half the amount. For dairy-free, use coconut oil or vegan butter and a flax egg instead of regular egg.
