  • 1/4 cup granulated sugar mixed with 1 teaspoon cinnamon (for topping)

Instructions

  1. Pour 1 cup of apple cider into a small saucepan and simmer over medium heat until it reduces to about 1/3 cup, approximately 10-15 minutes. Let it cool completely before using.
  2. Preheat your oven to 350°F (175°C) and grease your loaf pan with butter or non-stick spray.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. In a large bowl, use a hand or stand mixer to beat softened butter with granulated sugar and brown sugar until light and fluffy, about 2-3 minutes.
  5. Beat in the eggs one at a time, followed by the vanilla extract. Scrape down the sides of the bowl to ensure everything is mixed evenly.
  6. Mix in the cooled, reduced apple cider and sour cream until fully combined.
