  • 1 cup pomegranate arils
  • 1/2 cup goat cheese, crumbled
  • 1/2 cup candied pecans or walnuts
  • 1/4 cup red onion, thinly sliced
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions

  1. Rinse and pat dry the arugula.
  2. Slice the red onion as thinly as possible.
  3. If using a whole pomegranate, carefully remove the arils and set them aside.
  4. Chop or crush your candied nuts if desired.
  5. In a small mixing bowl, whisk together extra virgin olive oil, balsamic vinegar, Dijon mustard, honey, and a pinch of salt and pepper to make the dressing.
  6. In a large salad bowl, combine the arugula, pomegranate arils, red onion slices, and candied nuts.
  7. Drizzle the dressing over the top and gently toss to coat everything evenly.
  8. Crumble the goat cheese over the salad, ensuring it’s evenly distributed.
