These Cranberry Brie Bites are a quick, festive, and irresistible holiday appetizer made with just five ingredients. Flaky pastry, creamy brie, and sweet-tart cranberry sauce come together in bite-sized treats perfect for entertaining.

  • 1 can refrigerated crescent roll dough or 1 sheet puff pastry (about 8 oz or 225g)
  • 6 oz brie cheese, cut into 24 small cubes
  • 1/2 cup whole berry cranberry sauce
  • 23 tablespoons chopped pecans or pistachios (optional)
  • 1 tablespoon fresh rosemary or thyme, finely chopped (for garnish, optional)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 24-cup mini muffin tin with nonstick spray or butter.
  2. Unroll crescent roll dough and pinch seams together to form a rectangle, or thaw puff pastry and roll to 1/8-inch thickness. Cut dough into 24 equal squares (about 2 x 2 inches).
  3. Gently press each dough square into the wells of the mini muffin tin to form cups.
  4. Place one cube of brie into each dough cup.
  5. Add about 1 teaspoon of cranberry sauce on top of the brie in each cup.
  6. Sprinkle with chopped nuts and herbs, if using.
  7. Bake for 12-15 minutes, or until pastry is puffed and golden brown.
  8. Let cool in the tin for 5 minutes, then gently remove and transfer to a cooling rack for another 5 minutes before serving.

Notes

Keep dough cold for easy handling and best puff. Don’t overfill cups to prevent cheese overflow. Use parchment or silicone pans for easy cleanup. You can prep ingredients ahead and assemble just before baking. For gluten-free or vegan options, use suitable pastry and cheese substitutes. Bites are best served warm but can be reheated.
