  • 1 cup plain Greek yogurt
  • 3 tablespoons honey (or maple syrup as a substitute)
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • Β½ cup raisins (optional)
  • Β½ cup chopped walnuts or pecans

Instructions

  1. Wash and dry 4 medium apples. Dice them into bite-sized pieces, removing the core.
  2. Toss the diced apples with 2 tablespoons of fresh lemon juice in a large mixing bowl to prevent browning.
  3. In a smaller bowl, combine 1 cup of plain Greek yogurt, 3 tablespoons of honey, 1 teaspoon of ground cinnamon, and 1 teaspoon of vanilla extract. Whisk until smooth and creamy.
  4. Pour the cinnamon dressing over the apples and gently fold it in using a rubber spatula.
  5. Stir in Β½ cup of raisins and Β½ cup of chopped walnuts or pecans.
  6. Cover the bowl and refrigerate the salad for at least 30 minutes to let the flavors meld together.
