A creamy, spicy buffalo chicken dip perfect for parties and casual get-togethers, combining shredded chicken, cream cheese, and buffalo sauce for a deliciously addictive snack.

Ingredients

Scale
  • 2 cups cooked shredded chicken (rotisserie chicken recommended)
  • 8 ounces cream cheese, softened
  • 1/2 cup buffalo sauce (Frank’s RedHot recommended)
  • 1/2 cup ranch dressing (dairy-free option available)
  • 1 cup shredded cheddar cheese
  • 1/4 cup blue cheese crumbles (optional)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Shred the cooked chicken to about 2 cups.
  3. In a mixing bowl, combine the softened cream cheese, buffalo sauce, and ranch dressing. Blend until smooth using an electric mixer or sturdy spoon (about 2-3 minutes).
  4. Add the shredded chicken, shredded cheddar cheese, garlic powder, onion powder, salt, and pepper. Stir gently until evenly mixed.
  5. Transfer the mixture into an 8×8-inch baking dish and spread evenly with a spatula.
  6. Sprinkle blue cheese crumbles on top, if using.
  7. Bake in the preheated oven for 20-25 minutes until bubbly and lightly browned. Optionally, broil for 1-2 minutes for extra golden top, watching closely to prevent burning.
  8. Remove from oven and let rest for 5 minutes to thicken.
  9. Garnish with chopped green onions before serving.

Notes

Room temperature cream cheese blends better and prevents clumps. Shred chicken by hand for better texture. Avoid overbaking to keep dip moist. You can skip baking and warm gently on stovetop but baking enhances flavor and texture. For a thinner dip, stir in a tablespoon of milk or extra ranch dressing before baking. Leftovers keep well refrigerated for 3 days or frozen for up to 2 months.
