This creamy Butterbeer recipe is a magical, frothy drink inspired by Harry Potter, featuring a rich butterscotch flavor and dreamy whipped topping. Perfect for parties, movie nights, or any whimsical gathering, it comes together quickly with simple ingredients.

Ingredients

Scale
  • 32 oz cream soda (about 4 cups)
  • 6 tbsp butterscotch syrup
  • 2 tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • 2 tbsp butterscotch syrup (for foam)
  • 2 tbsp marshmallow fluff (optional, for foam)
  • Extra butterscotch syrup (for garnish, optional)
  • Gold sprinkles (for garnish, optional)

Instructions

  1. Prepare the creamy foam topping: In a large mixing bowl, combine heavy whipping cream, powdered sugar, and butterscotch syrup. Add marshmallow fluff if desired. Whip with a hand mixer or stand mixer on medium speed until soft peaks form (about 2-3 minutes).
  2. Make the Butterbeer base: In a small saucepan, melt unsalted butter over low heat. Add butterscotch syrup and stir to combine. Warm for 1-2 minutes, then remove from heat.
  3. Pour cream soda into a large pitcher or bowl. Stir in the melted butter-butterscotch mixture, vanilla extract, and a pinch of salt.
  4. For warm Butterbeer, gently heat the mixture in the saucepan for 2-3 minutes (do not boil). For cold Butterbeer, serve immediately over ice.
  5. Assemble: Pour the Butterbeer base into mugs or glasses, filling each about 2/3 full. Spoon the creamy foam topping generously over each mug. Garnish with extra butterscotch syrup and gold sprinkles if desired.
  6. Serve immediately for maximum frothy magic. If making ahead, keep the foam topping separate and add just before serving.

Notes

For dairy-free/vegan, use coconut cream and vegan margarine. Do not boil the soda to preserve fizz. Whip cream cold for best foam. Add marshmallow fluff for extra froth. Taste and adjust sweetness or salt as needed. Can be served warm or cold. Store base and foam separately if making ahead.
