  • 2 blocks full-fat cream cheese, softened to room temperature
  • 2 cups shredded sharp cheddar cheese
  • 1 packet ranch seasoning mix (or 2 tablespoons homemade ranch mix)
  • Pinch of garlic powder
  • 1 teaspoon Worcestershire sauce
  • 2 green onions, finely chopped
  • 1 cup pecans, chopped and toasted
  • 2 tablespoons fresh parsley, chopped
  • Crackers or pretzels for serving

Instructions

  1. Place the cream cheese and shredded cheddar cheese in a large mixing bowl. Use a hand mixer or stand mixer to blend them together until smooth and fluffy (about 2-3 minutes).
  2. Add the ranch seasoning mix, garlic powder, Worcestershire sauce, and green onions. Mix until well combined. The mixture should be creamy and evenly seasoned.
  3. Using a spatula, scrape the mixture onto a large piece of plastic wrap. Shape it into a ball with your hands, wrapping it tightly in the plastic wrap. Chill in the refrigerator for at least 1-2 hours to firm up.
  4. While the cheeseball is chilling, prepare the coating. In a small bowl, combine the chopped pecans and parsley. Stir to mix evenly.
  5. Once the cheeseball has chilled and firmed, remove the plastic wrap. Roll the cheeseball in the pecan and parsley mixture, pressing gently to ensure the coating adheres evenly.
  6. Place the coated cheeseball on your serving plate and arrange crackers or pretzels around it. Serve immediately or store in the fridge until ready to serve.
