  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 2 tbsp heavy cream or milk
  • Optional: pinch of salt
  • 1/2 cup semi-sweet or dark chocolate chips
  • 1 tsp coconut oil or butter
  • Optional toppings: crushed graham crackers, chopped nuts, sprinkles

Instructions

  1. Wash and dry strawberries gently. Cut off stems and hollow out centers using a small knife or melon baller, leaving the base intact.
  2. In a medium bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth and fluffy. Add heavy cream or milk and beat until creamy and pipeable. Add a pinch of salt if desired.
  3. Transfer filling to a piping bag or zip-top bag with the corner snipped. Fill each strawberry with 1–2 teaspoons of cheesecake mixture.
  4. In a microwave-safe bowl, combine chocolate chips and coconut oil or butter. Microwave in 20-second bursts, stirring after each, until smooth and glossy.
  5. Arrange filled strawberries on a parchment-lined plate or baking sheet. Drizzle melted chocolate over each strawberry using a spoon or piping bag.
  6. Sprinkle with optional toppings such as crushed graham crackers, chopped nuts, or sprinkles.
  7. Refrigerate strawberries for 5–10 minutes to let the chocolate set.
  8. Serve chilled and enjoy.

Notes

Use room temperature cream cheese for best texture. Don’t overbeat the filling or it may become runny. Choose firm, large strawberries for easy stuffing. For gluten-free, skip graham crackers or use gluten-free crumbs. For dairy-free, use plant-based cream cheese and milk. Slice a tiny bit off the bottom of strawberries to help them stand upright. Filling can be made ahead and stored in the fridge.
