  • 2 pounds Russet potatoes, peeled and chopped
  • 4 tablespoons unsalted butter, softened
  • 1/2 cup heavy cream, warmed
  • 1/2 cup whole milk, warmed
  • 1 bulb garlic, roasted until golden and soft
  • 1 cup cheddar cheese, shredded
  • 1/4 cup Parmesan cheese, freshly grated
  • Salt, to taste
  • Black pepper, freshly cracked, to taste
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Preheat your oven to 400Β°F (200Β°C).
  2. Prepare your garlic for roasting. Cut off the top of the bulb to expose the cloves, drizzle with a little olive oil, wrap it tightly in aluminum foil, and place it in the oven. Roast for 30-35 minutes until the cloves are golden and soft.
  3. Peel and chop the potatoes into even-sized chunks to ensure even cooking.
  4. Place the potatoes in a large pot and cover them with cold water. Add a generous pinch of salt. Bring the water to a boil, then reduce to a simmer and cook the potatoes for 12-15 minutes or until fork-tender.
  5. Drain the cooked potatoes using a colander and return them to the pot. Let them sit uncovered for a minute or two to evaporate excess moisture.
  6. Squeeze out the roasted garlic cloves from their skins and mash them into a paste.
  7. Warm the heavy cream and milk in a small saucepan over low heat.
  8. Add the softened butter to the potatoes and begin mashing until mostly smooth. Leave a few lumps for texture if preferred.
  9. Slowly pour in the warmed cream and milk mixture while continuing to mash. Adjust the liquid based on the desired consistency.
  10. Stir in the roasted garlic paste, cheddar cheese, and Parmesan cheese. Mix until the cheeses are melted and fully incorporated.
  11. Season with salt and freshly cracked black pepper to taste. Stir and taste to ensure the seasoning is just right.
  12. If desired, transfer the mashed potatoes to an oven-safe dish, top with additional shredded cheese, and broil for 3-5 minutes until the cheese is bubbly and golden brown.
  13. Garnish with freshly chopped parsley and serve warm.
