A creamy, comforting side dish made with Jiffy Corn Muffin Mix, perfect for holidays, potlucks, or casual weeknight meals.

Ingredients

Scale
  • 1 box Jiffy Corn Muffin Mix
  • 1 can creamed corn (1415 oz)
  • 1 can whole kernel corn, drained (1415 oz)
  • 1 cup sour cream
  • 2 large eggs
  • 1/2 cup melted butter
  • 1 cup shredded cheddar cheese (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Grease your baking dish with butter or cooking spray.
  2. In a large bowl, whisk together the eggs, sour cream, and melted butter until smooth.
  3. Add the Jiffy Corn Muffin Mix to the wet ingredients, stirring gently until just combined. Avoid overmixing.
  4. Stir in the creamed corn and the drained whole kernel corn. If adding cheese, fold it in at this stage.
  5. Pour the mixture into your greased baking dish. Spread it out evenly with a spatula.
  6. Bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  7. Let the casserole cool for about 10 minutes before serving.

Notes

[‘Don’t overmix the batter to maintain a light texture.’, ‘Use room temperature ingredients for even blending and baking.’, ‘Cover the dish loosely with foil if the edges brown too quickly.’, ‘Add a crispy cheese topping during the last 5 minutes of baking for extra flavor.’]
