  • 4 ounces cream cheese, softened (about 115 g)
  • 1/2 cup sour cream (120 ml)
  • Chopped fresh parsley (optional, for garnish)
  • Grated Gruyère or Swiss cheese (optional, for topping)

Instructions

  1. Caramelize the onions: Heat butter in a large skillet over medium-low heat. Add thinly sliced onions and stir occasionally for about 30 minutes until deep golden brown and sweet-smelling. Add minced garlic in the last 2 minutes.
  2. Brown the chicken (optional): Season chicken breasts with salt and pepper. Heat olive oil in another pan over medium-high heat and sear chicken for 2-3 minutes per side until golden.
  3. Combine ingredients in crockpot: Transfer caramelized onions to crockpot. Add beef broth, Worcestershire sauce, and thyme. Stir to combine.
  4. Add chicken to crockpot: Nestle browned or raw chicken breasts into the onion mixture. Cover with lid.
  5. Cook on low for 6-7 hours or on high for 3-4 hours until chicken is tender.
  6. About 10 minutes before serving, stir in softened cream cheese and sour cream until smooth. Add a splash of beef broth if sauce is too thick. Adjust salt and pepper to taste.
  7. Serve hot, garnished with chopped parsley and grated Gruyère cheese if desired. Serve over mashed potatoes, egg noodles, or crusty bread.

Caramelizing onions slowly is key for deep flavor; do not rush. Browning chicken is optional but adds flavor. Check chicken tenderness at 6 hours on low to avoid overcooking.
