  • One 3.4 oz box of instant vanilla pudding mix
  • 1 cup crushed pineapple, drained
  • 2 cups mini marshmallows
  • 1 cup canned mandarin oranges, drained
  • Β½ cup chopped pecans or walnuts (optional)
  • 4 oz softened cream cheese
  • Β½ cup cold milk

Instructions

  1. In a small mixing bowl, whisk together the vanilla pudding mix and cold milk until smooth. Let it sit for 5 minutes to thicken.
  2. In a large mixing bowl, beat the softened cream cheese until smooth and fluffy.
  3. Add the prepared pudding to the cream cheese and mix until fully combined.
  4. Gently fold in the whipped topping using a rubber spatula, being careful not to deflate it.
  5. Stir in the drained pineapple and mandarin oranges. Be sure to drain them well to avoid a watery salad.
  6. Fold in the mini marshmallows and chopped nuts, if using.
  7. Cover the bowl with plastic wrap and refrigerate for at least 2 hours to allow the flavors to meld.
  8. Scoop the fluff salad into a serving bowl or individual cups for a festive presentation. Sprinkle extra nuts on top if desired.

Notes
