A quick and easy frozen yogurt bark mixed with berries, honey, and vanilla for a creamy, refreshing, and guilt-free snack perfect for summer or anytime.

  • 2 cups Greek yogurt (full-fat or 2%)
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1 to 1 ½ cups mixed berries (strawberries, blueberries, raspberries, blackberries; fresh or frozen)
  • ¼ cup chopped nuts (optional; pistachios or almonds)
  • 2 tablespoons chia seeds or shredded coconut (optional)

Instructions

  1. Line a baking sheet or rimmed tray with parchment paper and set aside.
  2. In a medium mixing bowl, combine 2 cups Greek yogurt, 2 tablespoons honey, and 1 teaspoon vanilla extract. Stir gently until blended, about 2 minutes.
  3. Reserve a handful of berries for topping. Gently fold the remaining 1 to 1 ½ cups mixed berries into the yogurt mixture, about 1-2 minutes.
  4. Pour the yogurt and berry mixture onto the lined tray and spread evenly to about ¼ inch thickness. Sprinkle reserved berries, nuts, or chia seeds on top if desired.
  5. Place the tray flat in the freezer for at least 2 hours or until fully firm. Avoid moving the tray during freezing.
  6. Once frozen solid, lift the bark from the tray using the parchment paper and break into shards. Serve immediately or store in an airtight container in the freezer.

Notes

Do not overmix the yogurt and berries to keep the berries intact and prevent the yogurt from turning pink. Use full-fat or 2% Greek yogurt for creaminess. Thaw frozen berries slightly and drain excess liquid before folding in. Freeze on a flat, stable surface to avoid cracks. Let bark sit at room temperature for 5 minutes before serving for easier biting.
