  • 6 slices bacon, cooked crisp and crumbled
  • 8 ounces cream cheese, softened (full fat preferred)
  • 1 packet (about 1 ounce) ranch dressing mix
  • 1/2 cup sour cream (or Greek yogurt as a swap)
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 green onions, thinly sliced
  • 1 teaspoon garlic powder (optional)
  • Freshly ground black pepper, to taste
  • Optional add-ins: chopped cooked mushrooms or spinach

Instructions

  1. Preheat oven to 350°F (175°C). Cook 6 slices of bacon in a skillet over medium heat until crisp (about 8 minutes). Drain on paper towels, then crumble once cooled. Set aside.
  2. If not using pre-cooked chicken, poach or roast 3 boneless, skinless chicken breasts (about 1.5 pounds). Allow to cool slightly, then shred or cut into bite-sized pieces.
  3. In a large bowl, combine 8 ounces softened cream cheese, 1/2 cup sour cream, and 1 packet ranch seasoning. Mix until smooth and well blended. Add 1 teaspoon garlic powder and freshly ground black pepper to taste.
  4. Stir shredded chicken into the creamy ranch mixture until evenly coated, then fold in 1/2 cup shredded cheddar and 1/2 cup shredded mozzarella cheese.
  5. Transfer the mixture into a greased 9×13 inch casserole dish, spreading it out evenly.
  6. Sprinkle the remaining 1/2 cup cheddar and 1/2 cup mozzarella on top, followed by crumbled bacon and sliced green onions.
  7. Bake for 25-30 minutes, until bubbly and golden on top. If the top browns too fast, cover loosely with foil halfway through baking.
  8. Let the casserole cool for 5 minutes before serving.

Notes

Use rotisserie chicken to save prep time. Cover casserole with foil if top browns too quickly. For dairy-free, substitute cream cheese and sour cream with coconut cream or cashew-based alternatives and use dairy-free cheese. Pre-shredded cheese may affect meltiness; shredding fresh cheese is preferred. Leftovers reheat well in oven to keep topping crispy.
