  • 2 pounds (900 grams) russet potatoes
  • ½ cup (120 ml) sour cream
  • ¼ cup (60 grams) unsalted butter, softened
  • ½ cup (120 ml) whole milk, warmed
  • 1 teaspoon garlic powder
  • Salt to taste
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon chopped fresh chives (optional)

Instructions

  1. Peel and cut the potatoes into evenly sized chunks, about 1½-inch pieces.
  2. Place the potatoes in a large pot and cover with cold water by about an inch. Add a pinch of salt.
  3. Bring the water to a boil over medium-high heat, then reduce to a simmer. Cook until potatoes are fork-tender, about 15-20 minutes.
  4. Drain the potatoes thoroughly in a colander. Let them sit for a minute to steam off excess moisture.
  5. Return potatoes to the pot over low heat for 1-2 minutes, stirring gently to dry out remaining moisture.
  6. Transfer potatoes to a mixing bowl. Add the softened butter and start mashing gently until smooth but still slightly textured.
  7. Warm the milk gently, then fold it into the potatoes little by little until creamy.
  8. Fold in the sour cream carefully while the potatoes are still warm.
  9. Season with garlic powder, salt, and freshly ground black pepper to taste. Give a final gentle fold.
  10. Sprinkle with fresh chives if desired and serve immediately.

Notes

Start boiling potatoes in cold water for even cooking. Avoid over-mashing to prevent gluey texture. Warm milk and butter before adding to blend smoothly. Keep warm milk on hand to adjust consistency before serving.
