Instructions

  1. In a medium bowl, combine 1 cup smooth peanut butter and 4 ounces softened cream cheese. Blend with an electric mixer or sturdy spoon until creamy and fully combined, about 2-3 minutes.
  2. Stir in 1 1/2 cups powdered sugar, 1 teaspoon vanilla extract, and 2 tablespoons melted butter. Mix well until all ingredients are incorporated and the dough thickens, about 2 minutes.
  3. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to firm up the dough.
  4. Shape the chilled dough into 1-inch balls using your hands or a small cookie scoop. Place on a wax paper-lined baking sheet. You should get about 24 balls. Chill for another 15 minutes.
  5. Melt 12 ounces of chocolate chips using a double boiler or microwave in 30-second bursts, stirring frequently until smooth and glossy.
  6. Dip each peanut butter ball into the melted chocolate using a fork or dipping tool, coating fully. Tap off excess chocolate and place back on wax paper. Sprinkle with optional toppings immediately if desired.
