  • 2 tablespoons granulated sugar
  • 1 teaspoon olive oil
  • 1 cup (250g) whole milk ricotta cheese
  • 2 tablespoons heavy cream or milk
  • 1 tablespoon honey (plus extra for drizzling)
  • Zest of 1 small lemon
  • 4 slices good quality bread (sourdough, whole grain, or artisan), toasted
  • Fresh mint or basil (optional, for garnish)

Instructions

  1. Preheat your oven to 375Β°F (190Β°C). Line a baking sheet with parchment paper.
  2. In a bowl, toss the halved strawberries with 2 tablespoons granulated sugar and 1 teaspoon olive oil until evenly coated.
  3. Spread strawberries in a single layer on the baking sheet and roast for 15-20 minutes, stirring halfway through, until bubbly, soft, and slightly caramelized.
  4. While strawberries roast, whip the ricotta: combine 1 cup ricotta, 2 tablespoons heavy cream, 1 tablespoon honey, and lemon zest in a mixing bowl. Beat with a hand mixer or whisk until fluffy and smooth (about 2-3 minutes). Add more cream if needed.
  5. Toast 4 slices of bread until golden and crisp (3-5 minutes in a toaster or under broiler).
  6. Spread a generous layer of whipped ricotta on each toasted slice. Spoon warm roasted strawberries over the top. Drizzle with extra honey and sprinkle fresh mint or basil if using.

Notes

Drain excess juice from roasted strawberries to avoid soggy toast. Whipped ricotta can be made ahead and refrigerated; stir before use. Use whole milk ricotta for best creaminess. For vegan version, use dairy-free ricotta and maple syrup or agave instead of honey. Toast bread just before assembling to keep crisp.
