Instructions

  2. Peel and slice the potatoes thinly, about 1/8 inch (3 mm) thick. Place the slices in a large bowl and set aside.
  3. In a medium saucepan over medium heat, melt 4 tablespoons of unsalted butter. Add the minced garlic and cook for about 1 minute until fragrant, stirring often.
  4. Sprinkle 3 tablespoons of all-purpose flour over the melted butter and garlic. Stir constantly for 2 minutes to form a roux; it should be bubbly but not browned.
  5. Slowly pour in 2 cups whole milk and 1/2 cup heavy cream, whisking continuously to avoid lumps. Cook until the sauce thickens and coats the back of a spoon, about 5-7 minutes. Season with salt and pepper, then stir in the fresh herbs.
  6. Arrange a layer of potato slices in the buttered baking dish. Pour some sauce over the layer, spreading gently. Repeat layering potatoes and sauce until all are used, finishing with a sauce layer on top.
  7. If desired, sprinkle 1/2 cup grated cheese evenly over the top layer.
  8. Bake uncovered for 50-60 minutes until potatoes are tender and the top is bubbly and golden brown.
  9. Let the scalloped potatoes rest for about 10 minutes before serving to thicken the sauce.
