  • 2 pounds boneless, skinless chicken breasts
  • 8 ounces cream cheese, softened
  • 1 packet (1 ounce) ranch seasoning mix
  • 6 slices cooked bacon, chopped
  • 1 cup shredded cheddar cheese
  • Optional: 2 stalks green onions, thinly sliced
  • Optional: black pepper to taste

Instructions

  1. Rinse and pat dry the chicken breasts. Place them evenly in the bottom of the slow cooker.
  2. Cut softened cream cheese into chunks and scatter evenly over the chicken.
  3. Sprinkle ranch seasoning mix evenly over the cream cheese and chicken.
  4. Chop cooked bacon and sprinkle on top.
  5. Cover and cook on low for 6-7 hours or high for 3-4 hours until chicken is tender and shreds easily.
  6. Remove chicken breasts and shred directly in the slow cooker using two forks. Stir to combine with sauce and bacon.
  7. Sprinkle shredded cheddar cheese over the shredded chicken and stir gently until melted and incorporated.
  8. Garnish with sliced green onions and add black pepper if desired. Serve warm.

Notes

Softening the cream cheese before adding helps prevent lumps. If your slow cooker runs hot, add 1/4 cup chicken broth to keep chicken moist. Shred chicken directly in the slow cooker for best flavor absorption. Leftovers thicken when cooled; add milk or broth when reheating to loosen sauce.
