  • 3 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • 4 ounces cream cheese, softened
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat. Add chopped onion and sauté for 4-5 minutes until translucent and fragrant.
  2. Add minced garlic and cook for another 30 seconds, stirring constantly to avoid burning.
  3. Transfer sautéed onions and garlic to the slow cooker.
  4. Add chicken breasts, white beans, green chilies, chicken broth, ground cumin, chili powder, oregano, salt, and pepper to the slow cooker. Stir gently to combine.
  5. Cover and cook on low for 4-6 hours or on high for 2-3 hours until chicken is cooked through and tender.
  6. Remove chicken breasts and shred with two forks or a stand mixer. Return shredded chicken to the slow cooker and stir.
  7. Stir in softened cream cheese and sour cream until fully incorporated and chili is creamy and smooth. Add a splash of chicken broth or water if chili is too thick.
  8. Taste and adjust seasoning with salt, pepper, chili powder, or cayenne pepper if desired.
  9. Serve warm, garnished with fresh cilantro, shredded cheese, or a squeeze of lime.
