  • 1 large round Hawaiian bread loaf (about 12 oz or 340g)
  • 10 oz (280g) fresh spinach leaves, washed and roughly chopped (or frozen, thawed and drained)
  • 8 oz (225g) cream cheese, softened
  • ½ cup (120 ml) sour cream
  • ¼ cup (60 ml) mayonnaise
  • ½ cup (50g) grated Parmesan cheese
  • 2 cloves minced garlic
  • 1 tablespoon (15 ml) lemon juice
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Red pepper flakes (optional, a pinch)

Instructions

  1. Heat a large skillet over medium heat. Add the chopped fresh spinach and sauté, stirring often, until wilted and most moisture evaporates (about 4-5 minutes). Remove from heat and let cool slightly.
  2. Using a serrated knife, cut a circle around the top of the Hawaiian bread loaf (3–4 inches diameter). Remove the lid and scoop out the soft bread inside, leaving about a 1-inch thick shell. Reserve the bread pieces for dipping or other use.
  3. In a medium bowl, combine softened cream cheese, sour cream, and mayonnaise. Stir until smooth and creamy.
  4. Stir in grated Parmesan cheese, minced garlic, lemon juice, onion powder, salt, and pepper. Mix well.
  5. Fold the cooled wilted spinach into the creamy mixture until evenly distributed. Add red pepper flakes if desired.
  6. Spoon the creamy spinach dip into the hollowed bread bowl, smoothing the top.
  7. Optional: For a warm dip, place the filled bread bowl on a baking sheet and bake at 350°F (175°C) for 10 minutes until heated through and slightly bubbly. Serve immediately.

Notes

Press cooked spinach with paper towels to remove excess moisture to avoid watery dip. Use a serrated knife with a gentle sawing motion to hollow out the bread without tearing. The dip can be made ahead and served chilled or warmed. Toast reserved bread pieces for crunchy dippers.
