A cozy and creamy twist on the classic London Fog tea latte, infused with floral lavender and sweet strawberry for a comforting and fragrant drink.

  • 2 Earl Grey tea bags
  • 1 teaspoon dried culinary lavender buds (food-grade)
  • ½ cup fresh or frozen strawberries, sliced
  • 1 cup (240 ml) whole milk (or oat/almond milk for dairy-free)
  • 1 teaspoon vanilla extract
  • 2 tablespoons sweetener of choice (honey, maple syrup, or simple syrup)
  • 1½ cups (360 ml) water

Instructions

  1. In a small saucepan, bring 1½ cups (360 ml) of water to a gentle boil over medium heat. Remove from heat, add 2 Earl Grey tea bags and 1 teaspoon dried lavender buds. Cover and steep for 5 minutes.
  2. Rinse and slice ½ cup of strawberries. After steeping, add strawberries to the saucepan and return to low heat. Simmer gently for 3–4 minutes to infuse flavor without breaking down the strawberries completely.
  3. Strain the tea and strawberry mixture through a fine mesh strainer into a heatproof bowl or jug, pressing lightly on the strawberries to extract flavor but avoid pulp. Discard solids.
  4. In a separate small saucepan, warm 1 cup (240 ml) of whole milk over medium-low heat until hot but not boiling (around 150°F / 65°C). Froth the milk using a milk frother, steam wand, or by shaking vigorously in a jar for about 30 seconds.
  5. Stir 1 teaspoon vanilla extract and 2 tablespoons sweetener into the strained tea mixture. Adjust sweetness to taste.
  6. Pour the strawberry lavender Earl Grey tea mixture into a mug, filling about two-thirds full. Slowly pour in the frothed milk, holding back foam with a spoon, then spoon foam on top.
  7. Optionally garnish with a few dried lavender buds or a thin strawberry slice. Serve immediately and enjoy warm.

Notes

Avoid oversteeping lavender to prevent bitterness; steep for 5 minutes max. Warm milk to about 150°F (65°C) to avoid scorching and ensure good froth. Use food-grade culinary lavender, not perfume-grade. For stronger strawberry flavor, add strawberry jam or puree. Can be made dairy-free by substituting milk and sweetener. Tea and strawberry base can be prepared ahead and refrigerated up to 24 hours; froth milk fresh before serving.
