  • 4 tablespoons unsalted butter
  • 1 cup sour cream
  • 1/2 cup milk (whole milk or dairy-free alternative)
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika (optional)
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese (for topping)
  • 1/2 cup cooked, crumbled bacon (optional)
  • 1/4 cup chopped green onions

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash and peel 5 large russet potatoes, then cut them into chunks.
  3. Place the potato chunks in a large pot and fill with water, covering the potatoes completely. Add a pinch of salt, and bring to a boil. Cook for about 15-20 minutes, or until the potatoes are fork-tender.
  4. Drain the potatoes and transfer them to a large mixing bowl.
  5. Add 4 tablespoons of unsalted butter, 1 cup of sour cream, and 1/2 cup of milk to the potatoes. Mash until smooth and creamy. If the mixture feels too thick, you can add a splash more milk.
  6. Stir in 1 cup of shredded cheddar cheese, 1 teaspoon of garlic powder, 1/2 teaspoon of paprika, and salt and pepper to taste.
  7. Transfer the potato mixture to a greased 9×13-inch baking dish and spread evenly.
  8. Top with an additional 1 cup of shredded cheddar cheese, 1/2 cup of cooked, crumbled bacon, and 1/4 cup of chopped green onions.
  9. Cover the dish with aluminum foil and bake for 20 minutes.
  10. Remove the foil and bake for another 10 minutes, or until the cheese is bubbly and golden.
  11. Let the casserole cool for 5 minutes before serving. Enjoy!
