  • 1 lb Italian sausage (mild or spicy, casings removed)
  • 3 medium russet potatoes (about 500 g), peeled and diced
  • 6 cups fresh kale (about 150 g), stems removed and chopped
  • 1 medium yellow onion, finely diced
  • 3 garlic cloves, minced
  • 6 cups chicken broth (1.4 liters), low sodium preferred
  • 1 cup heavy cream (240 ml)
  • 1/2 tsp red pepper flakes (optional)
  • 2 tbsp olive oil (extra virgin preferred)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Heat 2 tablespoons olive oil over medium heat in a large heavy-bottomed pot or Dutch oven. Add the sausage, breaking it up with a spoon. Cook until browned and cooked through, about 7-10 minutes. Drain excess fat if excessive, but keep some for flavor.
  2. Add diced onion to the pot with the sausage. Cook until translucent, about 4 minutes. Stir in minced garlic and red pepper flakes, cooking for another 1 minute until fragrant but not burned.
  3. Pour in the diced potatoes and chicken broth. Bring to a boil, then reduce heat to a gentle simmer. Cook until potatoes are tender, about 20 minutes. Stir occasionally to prevent sticking.
  4. Using an immersion blender, blend about one-third of the soup right in the pot to thicken the broth. If using a regular blender, carefully transfer some soup in batches, blend, then return it to the pot. (Optional step, about 5 minutes)
  5. Stir in chopped kale and heavy cream. Simmer for another 5 minutes until kale is tender but still vibrant green. Taste and season with salt and pepper as needed.
  6. Remove from heat. Let sit for a few minutes to allow flavors to meld. Serve hot, ideally with crusty bread on the side.

Notes

If the soup thickens too much when reheating, stir in a splash of broth or water. For a dairy-free version, substitute heavy cream with canned coconut milk or almond milk creamer. Browning the sausage well is key to releasing flavorful fats that enhance the broth. Avoid overcooking kale to keep it tender but vibrant. Adjust seasoning at the end to prevent over-salting.
