These crispy air fryer egg rolls deliver a crunchy exterior with a savory filling, paired perfectly with a tangy and easy sweet and sour sauce. A healthier, quick, and delicious twist on classic fried egg rolls.

  • 1 package egg roll wrappers (about 12 wrappers) – spring roll wrappers recommended
  • 2 cups shredded cabbage (about half a small head)
  • 1 cup shredded carrots
  • 1 cup cooked ground pork or chicken (optional)
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce (low sodium preferred)
  • 1 teaspoon sesame oil
  • 1 teaspoon grated fresh ginger or ½ teaspoon ground ginger
  • Salt and pepper to taste
  • 1 large egg, beaten (for sealing wrappers) – or water as substitute
  • ½ cup rice vinegar
  • ½ cup sugar
  • ¼ cup ketchup
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch mixed with 2 tablespoons water

Instructions

  1. Prepare the filling by combining shredded cabbage, shredded carrots, cooked ground pork or chicken (if using), minced garlic, soy sauce, sesame oil, ginger, salt, and pepper in a large bowl. Mix well until evenly combined.
  2. Set up your rolling station by laying one egg roll wrapper on a clean, flat surface with one corner facing you (diamond shape). Keep remaining wrappers covered with a damp towel.
  3. Spoon about 2-3 tablespoons of filling near the corner closest to you, leaving about an inch from the edges. Avoid overfilling.
  4. Fold the corner over the filling, then fold in both side corners tightly, and roll away from you until sealed. Brush the final corner edge with beaten egg to seal. Repeat for all wrappers.
  5. Preheat the air fryer to 375°F (190°C) for 3 minutes.
  6. Arrange egg rolls seam side down in the air fryer basket without touching to allow even air circulation.
  7. Air fry at 375°F (190°C) for 10-12 minutes, flipping halfway through, until golden brown and crisp. Add 1-2 minutes if needed, watching closely to avoid burning.
  8. While egg rolls cook, make the sweet and sour sauce by combining rice vinegar, sugar, ketchup, and soy sauce in a small saucepan over medium heat. Stir until sugar dissolves.
  9. Add cornstarch slurry and cook, stirring constantly, until thickened (about 2 minutes). Remove from heat and let cool slightly.
  10. Serve egg rolls hot with sweet and sour sauce on the side for dipping.

Notes

Do not overfill wrappers to prevent tearing. Keep wrappers covered with a damp towel to avoid drying out. Brush egg wash on edges to seal well. Preheat air fryer for best crispiness. Flip egg rolls halfway through cooking for even browning. Drain excess moisture from filling to avoid soggy rolls. Can bake at 400°F (200°C) for 20-25 minutes if no air fryer is available.
