This recipe delivers perfectly crispy, golden air fryer French fries with a fluffy inside and unbeatable crunch using simple ingredients and a secret cornstarch coating.

Ingredients

Scale
  • 2 large Russet potatoes (about 1.5 pounds / 700 grams)
  • 2 tablespoons vegetable oil or avocado oil
  • 1 tablespoon cornstarch
  • Salt to taste (kosher salt recommended)
  • Freshly ground black pepper to taste (optional)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika

Instructions

  1. Wash and peel the potatoes or leave the skin on for a rustic feel. Slice into evenly sized sticks about 1/4 inch (6 mm) thick.
  2. Place the sliced potatoes in a large bowl of cold water and soak for at least 30 minutes to remove excess starch.
  3. Drain the water and pat the fries completely dry using paper towels or a clean kitchen towel.
  4. Sprinkle 1 tablespoon of cornstarch over the fries and toss to coat evenly.
  5. Drizzle 2 tablespoons of oil over the fries. Add salt, pepper, garlic powder, and paprika. Toss well to coat every fry lightly.
  6. Preheat the air fryer to 375°F (190°C) for 5 minutes.
  7. Place the fries in the air fryer basket in a single layer without overcrowding.
  8. Air fry the fries for 15 to 20 minutes, shaking the basket every 5 minutes to ensure even cooking, until golden and crispy.
  9. Sprinkle extra salt immediately after cooking if desired.

Notes

Soaking and drying the potatoes is key to removing excess starch and achieving crispiness. Toss fries with cornstarch for a crunchy crust. Preheat the air fryer for better texture. Avoid overcrowding the basket to ensure even cooking. Shake basket every 5 minutes. For extra crispiness, try the double-fry method: air fry at 320°F for 10 minutes, then at 400°F for 5 minutes.
