  • 4 large russet potatoes (about 2.6 lbs), scrubbed and cut into wedges (skin-on)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 5 slices thick-cut bacon (about 5 oz), cooked until crisp and crumbled
  • 1 cup shredded cheddar cheese (about 4 oz)
  • 2 green onions, thinly sliced
  • 2 tablespoons fresh parsley, chopped (optional)
  • 1/2 cup ranch dressing
  • 1 tablespoon sour cream
  • 1 small garlic clove, minced
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

Instructions

  1. Scrub potatoes well and pat dry. Cut each potato into 8 thick wedges, aiming for even sizes.
  2. In a large mixing bowl, toss potato wedges with olive oil, garlic powder, smoked paprika, onion powder, dried oregano, kosher salt, and black pepper until evenly coated.
  3. Preheat air fryer to 400°F for 3 minutes.
  4. Arrange potato wedges in a single layer in the air fryer basket. Air fry for 12 minutes, flip each wedge, then air fry another 10-12 minutes until golden brown and crispy.
  5. While potatoes cook, cook bacon in a skillet over medium heat until crispy. Drain on paper towels and crumble.
  6. In a small bowl, mix ranch dressing, sour cream, minced garlic, and dill until smooth.
  7. Transfer hot potato wedges to a serving plate. Sprinkle with shredded cheddar, crumbled bacon, sliced green onions, and parsley.
  8. Drizzle ranch mixture over the top or serve on the side for dipping.

Notes

For extra crispy wedges, pat potatoes dry before seasoning and avoid overcrowding the air fryer basket. Flip wedges halfway through cooking for even browning. Cheese melts best when added immediately after air frying. For vegetarian, omit bacon and use plant-based cheese and ranch.
