  • ½ cup (100g) granulated sugar
  • ¼ cup (50g) brown sugar
  • ½ cup (113g) unsalted butter, softened
  • 1 large egg, room temperature
  • 1 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • ¾ cup (75g) sliced almonds, lightly toasted
  • ½ teaspoon baking powder
  • ¼ teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Toast the sliced almonds in a dry skillet over medium heat, stirring frequently for 3-5 minutes until golden and fragrant. Set aside to cool.
  3. In a large bowl, whisk together the flour, baking powder, and salt.
  4. In another bowl, beat the softened butter with granulated sugar and brown sugar until light and fluffy, about 3 minutes.
  5. Beat in the egg, almond extract, and vanilla extract until well combined.
  6. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Avoid overmixing.
  7. Fold in the toasted sliced almonds, reserving a few for topping.
  8. Transfer the dough onto the prepared baking sheet and spread evenly into a thin rectangle about ¼ inch (6 mm) thick using a spatula or bench scraper.
  9. Sprinkle the reserved toasted almonds on top and press lightly into the dough.
  10. Bake for 12-15 minutes, or until edges are golden brown and the top looks set. Start checking at 12 minutes to avoid burning.
  11. Remove from oven and let cool on the baking sheet for 10 minutes to firm up.
  12. Cut into rectangles or squares while still warm for clean edges.
  13. Transfer cookies to a wire rack to cool completely and become extra crisp.
