A quick and easy appetizer featuring fresh asparagus wrapped in crispy prosciutto, finished with a tangy balsamic glaze. Perfect for entertaining or a savory snack.

  • 1 bunch fresh asparagus spears (about 1 pound / 450 grams), trimmed
  • 810 thin slices prosciutto
  • 1 tablespoon extra virgin olive oil
  • ½ cup (120 ml) balsamic vinegar
  • 1 tablespoon honey or brown sugar
  • Freshly cracked black pepper, to taste
  • Pinch of sea salt (optional)
  • ½ teaspoon garlic powder

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Rinse asparagus spears under cold water and trim the tough ends (about 1 to 2 inches). Pat dry thoroughly.
  3. Place asparagus in a bowl, drizzle with olive oil, sprinkle garlic powder, and toss to coat evenly. Add a pinch of sea salt if desired.
  4. Take 3-4 asparagus spears and wrap one slice of prosciutto around them snugly, spiraling from bottom to tips. Repeat for all asparagus.
  5. Arrange bundles seam side down on the prepared baking sheet.
  6. Bake for 15-18 minutes until prosciutto is crispy and golden, and asparagus is tender but slightly firm. Turn bundles halfway through baking using tongs.
  7. While baking, combine balsamic vinegar and honey or brown sugar in a small saucepan. Simmer over medium heat, stirring occasionally, until thick and syrupy (about 8-10 minutes).
  8. Remove bundles from oven and let rest for a couple of minutes.
  9. Arrange bundles on a serving platter and drizzle generously with the balsamic glaze. Add freshly cracked black pepper.
  10. Serve warm or at room temperature.

Notes

If prosciutto browns too quickly, tent bundles loosely with foil midway through baking. Dry asparagus thoroughly to avoid soggy prosciutto. Use thin prosciutto slices for best crispiness. Store leftovers in an airtight container in the fridge for up to 2 days; reheat in a 350°F oven for 5-7 minutes. Avoid microwaving to keep prosciutto crispy.
