  • 8 chicken drumsticks (about 2 pounds / 900 grams) with skin on
  • 3 tablespoons honey (raw or organic preferred)
  • 2 tablespoons Dijon mustard
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt (sea salt or kosher salt recommended)
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon freshly squeezed lemon juice

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a mixing bowl, whisk together honey, Dijon mustard, olive oil, garlic powder, smoked paprika, salt, black pepper, and lemon juice until smooth.
  3. Add chicken drumsticks to the bowl and toss thoroughly to coat each piece with the honey mustard mixture.
  4. Place a wire rack over a parchment-lined rimmed baking sheet and arrange drumsticks spaced apart. If no wire rack, lay drumsticks directly on parchment paper.
  5. Bake for 35-40 minutes, flipping drumsticks at the 20-minute mark for even crisping and glaze coverage.
  6. Check that chicken reaches an internal temperature of 165°F (74°C) and skin is golden brown and caramelized. If needed, bake an additional 5 minutes.
  7. Let drumsticks rest for 5 minutes before serving to allow juices to redistribute and glaze to set.

Notes

Pat chicken dry before coating for crispier skin. Use a wire rack for best results. Tent with foil if glaze darkens too quickly. Can marinate chicken up to 4 hours ahead. For air fryer, cook at 400°F (200°C) for 20-25 minutes, flipping halfway.
