A quick and easy homemade BBQ chicken pizza with a crispy crust, melty cheese, tangy BBQ sauce, and fresh toppings, perfect for family meals and weeknight dinners.

  • 1 ball of pre-made pizza dough (about 12 oz / 340 g)
  • 1 tablespoon olive oil (for brushing the crust)
  • 1 cup cooked chicken breast, shredded or chopped
  • ½ cup BBQ sauce
  • 1½ cups shredded mozzarella cheese
  • ½ cup shredded smoked gouda or cheddar cheese
  • ½ small red onion, thinly sliced
  • 1 small bell pepper, thinly sliced
  • Fresh cilantro leaves, roughly chopped
  • Optional: Jalapeño slices
  • Optional: Drizzle of ranch or blue cheese dressing

Instructions

  1. Preheat your oven to 475°F (245°C) and place your pizza stone or baking sheet inside while the oven heats for about 20 minutes.
  2. In a mixing bowl, toss the shredded chicken with ½ cup of BBQ sauce until well coated. Set aside.
  3. Lightly flour your work surface and stretch the pizza dough into a roughly 12-inch (30 cm) circle using your hands or a rolling pin.
  4. Carefully place the stretched dough onto a piece of parchment paper.
  5. Lightly brush the edges of the dough with olive oil.
  6. Spread a thin layer of BBQ sauce over the dough, leaving about an inch border for the crust.
  7. Sprinkle half the mozzarella cheese evenly over the sauce.
  8. Distribute the BBQ-coated chicken evenly over the cheese layer.
  9. Sprinkle the remaining mozzarella and smoked gouda on top, then scatter the sliced red onions and bell peppers.
  10. Using a pizza peel or the parchment paper, transfer the pizza onto the preheated stone or baking sheet.
  11. Bake for 12 to 15 minutes, until the crust is golden and cheese is bubbling.
  12. Remove from oven, sprinkle fresh cilantro leaves, and add jalapeños or a drizzle of ranch if desired.
  13. Let it cool for 3–5 minutes before slicing.

Notes

Preheat the oven and baking surface thoroughly for a crispy crust. Use a thin layer of BBQ sauce to avoid sogginess. Let chicken come to room temperature before assembling. Tent with foil if crust edges brown too fast. Wait a few minutes after baking before slicing for easier cuts. For gluten-free, use gluten-free dough and adjust baking time. Add fresh herbs after baking to keep them crisp.
