Crispy Caraway Twists are golden, shatteringly crisp pastries with buttery flaky layers and a nutty aroma from toasted caraway seeds. They make the perfect snack for brunches, parties, or cozy afternoons and are dangerously easy to make.

  • 2 cups all-purpose flour (240g)
  • 1 cup cold unsalted butter (226g), cut into cubes
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 cup ice-cold water (120ml), plus more as needed
  • 2 tablespoons caraway seeds, toasted
  • 1 large egg, beaten (for egg wash)
  • Coarse sea salt, for sprinkling

Instructions

  1. Measure out all ingredients. Cut cold butter into small cubes and keep chilled.
  2. In a large bowl, whisk together flour, baking powder, and salt. Add cold butter cubes and cut into the flour using a pastry cutter or two forks until pea-sized crumbs form.
  3. Drizzle in ice-cold water, a little at a time, tossing with a fork until the dough just comes together. Add more water if needed. Do not overmix.
  4. Gather dough into a rough ball, flatten to a disk, wrap in plastic, and chill for at least 15 minutes.
  5. Lightly flour your work surface. Roll dough into a 10×14 inch rectangle. Brush with beaten egg and sprinkle half the caraway seeds evenly. Fold dough in thirds (like a letter), turn 90 degrees, and roll out again to a 10×14 inch rectangle. Repeat egg wash and caraway, then fold once more.
  6. Roll dough one final time to about 1/4 inch thickness. Slice into 1-inch wide strips (about 12-14 strips). Twist each strip several times and set on a parchment-lined baking sheet.
  7. Brush each twist with more egg wash and sprinkle with coarse sea salt.
  8. Bake at 400°F (200°C) for 15-18 minutes, until deeply golden and crisp. Rotate tray halfway for even browning.
  9. Let twists cool on the sheet for 5 minutes, then transfer to a rack. Enjoy!

Notes

Keep butter and dough cold for maximum flakiness. Don’t overwork the dough. Toast caraway seeds for extra flavor. Twists are best fresh but can be stored in an airtight container for 2 days or frozen for up to 1 month. Reheat in a 350°F oven to restore crispness. Variations include cheese, herbs, or swapping caraway for other seeds.
