  • 1 lb (450 g) frozen hash brown potatoes, thawed
  • 2 cups (200 g) sharp cheddar cheese, shredded
  • 4 oz (115 g) cream cheese, softened
  • 1 tsp onion powder
  • ½ tsp garlic powder (optional)
  • Salt and black pepper to taste
  • 1 can (10.5 oz / 300 g) condensed cream of chicken soup (or cream of mushroom for vegetarian)
  • ½ cup (120 ml) whole milk
  • 4 tbsp (60 g) butter, melted (divided use)
  • 2 cups (60 g) crushed cornflakes cereal
  • 2 tbsp (30 g) additional melted butter for topping
  • ¼ tsp paprika or smoked paprika (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly butter a 9×13-inch baking dish to prevent sticking.
  2. In a large bowl, combine thawed hash browns, shredded sharp cheddar cheese, and softened cream cheese. Blend with an electric mixer or whisk until smooth and creamy.
  3. In a separate bowl, whisk together condensed cream of chicken soup, milk, 4 tbsp melted butter, onion powder, garlic powder, salt, and pepper. Pour over the potato mixture and fold gently but thoroughly.
  4. Transfer the mixture into the prepared baking dish, spreading evenly and tapping the dish lightly to settle.
  5. In a small bowl, toss crushed cornflakes with 2 tbsp melted butter and paprika if using.
  6. Sprinkle the cornflake topping evenly over the potato mixture.
  7. Cover the dish loosely with aluminum foil and bake for 40 minutes.
  8. Remove the foil and bake uncovered for an additional 15 minutes or until the topping is golden brown and crispy.
  9. Let the casserole rest for about 10 minutes before serving to set.

Notes

Thaw hash browns completely and press out excess moisture to avoid sogginess. Resting the casserole after baking helps absorb excess moisture and makes slicing easier. Use gluten-free cornflakes and soup for gluten-free version. Reheat in oven to maintain crispy topping.
