A cozy, easy-to-make bread loaf featuring tender apple chunks and a crispy cinnamon sugar crust, perfect for breakfast, dessert, or gatherings.

Ingredients

Scale
  • 2 cups (240g) all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 tablespoon ground cinnamon plus extra for topping
  • ½ teaspoon salt
  • ¾ cup (150g) granulated sugar
  • ½ cup (113g) unsalted butter, melted and cooled
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ½ cup (120ml) buttermilk or plain yogurt as substitute
  • 2 medium apples, peeled and diced (recommended mix of Granny Smith and Fuji)
  • Cinnamon sugar topping: ¼ cup (50g) granulated sugar mixed with 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray and set aside.
  2. In a large bowl, whisk together the dry ingredients: flour, baking powder, baking soda, cinnamon, salt, and sugar until evenly combined.
  3. In a separate bowl, whisk the wet ingredients: eggs, buttermilk, melted butter, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients and fold gently with a spatula until just combined; a few lumps are fine.
  5. Fold in the diced apples gently to distribute evenly without crushing.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Sprinkle the cinnamon sugar topping evenly over the batter.
  8. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Tent with foil if the top browns too quickly.
  9. Let the loaf cool in the pan for about 15 minutes, then transfer to a cooling rack to cool completely to keep the crust crispy.

Notes

Do not overmix the batter to keep the bread tender. Use room temperature eggs and butter for better texture. If apples are very juicy, toss with a teaspoon of flour before folding in. Tent with foil if the cinnamon sugar topping browns too fast. Let the loaf cool completely on a rack to maintain a crispy crust.
