  • ¼ cup (60ml) olive oil, plus more for drizzling
  • 1 tsp sugar
  • 2 tsp salt
  • 3 tbsp everything bagel seasoning (sesame seeds, poppy seeds, dried garlic, dried onion, coarse salt)
  • 1 tsp coarse sea salt for sprinkling

Instructions

  1. Activate the yeast: In a mixing bowl, whisk warm water (105°F/40°C) with sugar and active dry yeast. Let sit for 5-10 minutes until foamy.
  2. Mix the dough: Add flour and salt to the yeast mixture. Stir until a shaggy dough forms. Drizzle in ¼ cup olive oil and mix until combined. Dough will be sticky.
  3. First rise: Cover bowl with plastic wrap or kitchen towel. Let dough rest in a warm spot until doubled in size, about 1 to 1.5 hours.
  4. Prepare the pan: Generously oil a 9×13-inch baking pan with olive oil.
  5. Shape the dough: Transfer risen dough onto the oiled pan. Stretch and press evenly to fill the pan without deflating completely. Rest 5 more minutes if resistant.
  6. Dimple the dough: Press deep dimples all over the surface with fingertips to trap olive oil and seasoning.
  7. Second rise: Cover loosely and let rest until puffed but not doubled, about 30 minutes.
  8. Season and oil: Drizzle more olive oil over the top, sprinkle everything bagel seasoning evenly, and finish with coarse sea salt.
  9. Bake: Preheat oven to 425°F (220°C). Bake for 25-30 minutes until golden brown and crisp around edges.
  10. Cool and serve: Let focaccia cool for 10 minutes in the pan before slicing.

Notes

Use high-hydration dough for a soft, airy crumb. Press dimples deeply to trap olive oil and seasoning for crispness and flavor. Rotate pan halfway through baking if oven heats unevenly. For gluten-free, substitute flour with gluten-free bread blend and add xanthan gum. Avoid microwaving leftovers to maintain crispness.
