Ingredients

Scale
  • 2 cups (250g) all-purpose flour, plus extra for dusting
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup (245g) plain Greek yogurt (full-fat or 2%)
  • 1 tablespoon olive oil
  • 1 large egg, beaten
  • 1 tablespoon milk (any kind)
  • 3 tablespoons everything bagel seasoning
  • Optional: extra sesame seeds or poppy seeds for topping

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly oil it.
  2. In a large bowl, whisk together flour, baking powder, and salt.
  3. Make a well in the center and add Greek yogurt and olive oil. Mix until a shaggy dough forms.
  4. Dust your work surface with flour. Turn out the dough and knead gently for 2 minutes until smooth.
  5. Pat or roll dough into a rectangle about 1/2-inch thick and roughly 9×12 inches.
  6. Cut dough into 12-16 breadsticks, each about 1-inch wide.
  7. Twist each strip if desired and lay on the prepared baking sheet.
  8. In a small bowl, beat egg with milk. Brush each breadstick generously with the egg wash.
  9. Sprinkle everything bagel seasoning evenly over breadsticks. Press lightly so it sticks. Add extra sesame or poppy seeds if desired.
  10. Bake on the middle rack for 18-22 minutes, until golden brown and crispy at the edges. Rotate pan halfway if needed.
  11. Let breadsticks cool on the pan for 5 minutes, then transfer to a wire rack.
  12. Serve warm or at room temperature. Store leftovers in an airtight container.

Notes

For gluten-free, use a 1:1 baking blend and add 2 extra tablespoons yogurt. For vegan, use coconut yogurt, plant-based milk, and brush with olive oil instead of egg wash. Add cheese or herbs for extra flavor. Breadsticks are best fresh but can be stored in an airtight container for up to 2 days or frozen for up to 2 months.
