  • 1 teaspoon onion powder

  • Salt and pepper to taste
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • Vegetable oil for frying (use a high smoke point oil like canola or sunflower)
  • Fresh parsley or chives for garnish (optional)

Instructions

  1. Clean the mushrooms by gently wiping them with a damp paper towel to remove dirt. Avoid rinsing under water to prevent moisture absorption.
  2. Prepare the breading station: In one bowl, mix flour, cornstarch, garlic powder, onion powder, smoked paprika, salt, and pepper. In a second bowl, beat eggs until smooth. In a third bowl, add panko breadcrumbs.
  3. Heat about 2 inches of vegetable oil in a large frying pan or deep skillet over medium heat (around 350°F/175°C).
  4. Coat each mushroom in the flour mixture, dip into the beaten eggs, and roll in panko breadcrumbs for an even coating.
  5. Place coated mushrooms into the hot oil in batches, ensuring not to overcrowd the pan. Fry for 2-3 minutes per side or until golden brown and crispy.
  6. Use tongs or a slotted spoon to transfer fried mushrooms to a plate lined with paper towels to drain excess oil.
  7. Garnish with freshly chopped parsley or chives and serve immediately.

Notes

For maximum crunch, use panko breadcrumbs and maintain the oil temperature at 350°F. Fry in small batches to avoid overcrowding the pan. Consider adding Parmesan cheese to the mushrooms right after frying for extra flavor.
